Here's a look at my wall, in completion...
The Olympics are officially over. I feel like a part of me is missing! We spent so much time organizing, shopping and cooking for the Olympics, that I almost don't know what to do with my life!
The final tally is that we did 71 Countries out of the 82 Countries represented... which makes me realize that if I had only been a little more disciplined on a few of the nights, we would have accomplished all 82. I have to remind myself, though, that I'm 32 1/2 weeks pregnant, that I felt like my feet were going to fall off for 2 weeks straight, and I have a 2 1/2 year old, 2 jobs, and volunteer twice a week at youth group... so overall, we did really well.
The last sha-bang (is that even how you spell that?!) was Saturday Night... We had a South America/Carribean Night, and we really went all out. The food was absolutely spectacular... unfortunately, just as we sat down, Audrey got really sick... like projectile-all-over-the-house-in-360-mode kind of sick... which pretty much ruined the meal for most of us.
It was not pretty.
But I come out of the Olympics thinking that I'd love to do this challenge again (2 1/2 years is enough time to recover, I think) and with some recipes that I am DEFINITELY doing again...
Here was the menu for Saturday, if you're interested...
Bermuda: Ginger Beer (which I actually HATE... but it was made in Bermuda, so why not?)
Argentina: Black beans a la Olla (delish)
Brazil: Chicken Cutlets with Tropical Salsa (Rachael Ray.. and a MUST do)
Chili: Chilean Potatos (oh my word, sooooo tasty... layered potato slices, tomatos, mozza cheese and sour cream baked)
Cayman Islands: Iced Coconut Soup (sounded good... was the only disappointment of the 2 weeks for me)
Iceland: Pickled Beets (okay, not Caribbean or South America, but we were grasping at straws to finish)
Peru: Peruvian Pound Cake (with a lemon/sour cream topping and peaches... mmmmm)
Puerto Rico: Baked Bananas
and then I managed to whip up some Portugal Sweet Bread for breakfast for Sunday... so overall, a pretty busy day!
I am sad that it's over, but excited to get back to stamping... have some workshops and club to get ready for this month, plus I'm hoping to do a Birthday Stamp a Stack... so I'll be busy doing that this month...
On top of all that, it's our Youth Groups "Amazing Race" this month... and Heidi (my sister) and I are organizing the whole event, so our husbands can race... HUGE undertaking...
